Ingredients to make Quick and easy chhole

  • chickpeas/ chole- 1 1/2 cups
  • tomatoes- 3 big
  • onions- 2 medium (1/2 chopped in small pieces and rest to be ground in mixer)
  • Green chilli- 2
  • ginger- 1 inch
  • garlic- 10 cloves
  • oil- 1 tbsp
  • Bayleaf- 2
  • cinnamon- 1 inch
  • cloves- 5
  • Big elaichi- 2
  • asafoetida- 1/4 tsp
  • turmeric- 1/2 tsp
  • chilli powder- 1 tsp
  • Garam masala/ chole masala- 1 tsp
  • Kasuri methi- 1 tsp
  • coriander for garnishing

How to make Quick and easy chhole

  1. Wash and soak chole for minimum 8 hours.
  2. Take tomatoes, garlic, ginger, green chillies and onion in a mixer pot and grind to a paste.
  3. Take oil in a cooker. When it heats add bay leaf, cloves, cinnamon, elaichi, asafoetida, cumin seeds.
  4. Saute for 30 seconds and then add chopped onions.
  5. Saute till they become brown and then add the tomato onion paste.
  6. Saute till raw smell goes away and add dry spices like coriander powder, turmeric, chilli powder.
  7. Add salt and chole. Mix everything properly.
  8. Add garam masala or chole masala and crushed kasuri methi.
  9. Add 3 cups of water and cover the cooker.
  10. Take 6 to 8 whistles and let the pressure release by itself.
  11. Open the cooker and check whether the chole have become soft.
  12. Garnish with coriander and serve with bhature, paratha, naan or roti.

My Tip:

As we are cooking chhole along with spices directly in cooker the spices get absorbed nicely into chhole.
