Ingredients to make Dalma

  • Split red lentil 1 cup
  • Pumpkin 1/4 cup chopped
  • Potato 1 medium chopped
  • Brinjal 1 medium chopped
  • Colocassia 2 small chopped
  • Raw banana 1/4 cup chopped
  • Carrot 1/4 cup chopped
  • Raw papaya 1/4 cup chopped
  • Tomatoes 1 cup chopped
  • Turmeric powder 1/2 teaspoon
  • Green chillies 2 slit into half
  • Salt as per your taste
  • For making a coarse powder:
  • Dry red chillies 2
  • Cumin seeds 1 tablespoon
  • For tempering:
  • Bay leaves 1
  • Panch phoran 2 teaspoon
  • Dry red chillies 2
  • Grated ginger 1 teaspoon
  • Asafoetida a generous pinch
  • Oil 1 tablespoon
  • Water 3 cups

How to make Dalma

  1. In a pressure cooker take split red gram and all other vegetables along with water and pressure cook for 3 whistles
  2. Dry roast red chillies and cumin seeds
  3. On cooling make a coarse powder it in a mortar and pestle
  4. Take a pan and heat oil in it
  5. Now add bay leaves, dry red chillies ,asafoetida, ginger and panch phoran.
  6. When the panch phoran splutters transfer the pressure cooked lentil and vegetable mix into it and let simmer for 10 minutes.
  7. When the dalma reaches your desired consistency switch off the gas and add the cumin and chilli powder to it.
  8. Serve hot with ghee rice

My Tip:

Cut the vegetables equally to ensure even cooking. Don't skip the red chilli and cumin powder as it imparts an authentic taste to the dish. You can also add grated coconut if you want, add it along with cumin and red chilli powder.
