Ingredients Serving: 4

  1. Pink lentils (masur dal) 1 ½ cup (for pakora or vada)
  2. Coriander leaves half a handful
  3. Green chili 2 pc
  4. Ginger ½ inch
  5. Salt as per taste
  6. Mustard oil to shallow fry
  7. Potatoes 3 pcs (large)
  8. Tomato 2 pcs
  9. Onion 2 pcs
  10. Garlic 5 pods
  11. Ginger ½ inch
  12. Green chili 1 pc
  13. Coriander powder 1 tbsp
  14. Salt to taste
  15. Turmeric 1 tsp
  16. Coriander leaves for garnishing
  17. Mustard oil 2 tbsp

Instructions

  1. For pakora or vada, soak the pink lentils in water for half an hour. Grind together softened pink lentils, Coriander leaves, green chilies, ginger, salt into a coarse paste. The coarsely ground lentils tastes better when fried.
  2. Now, take a spoonful of the coarse batter and shallow fry the pakoras in elongated shapes till golden brown. Keep the flame in medium and avoid burning the pakoras while frying. Once all pakoras are ready, keep it aside and start with the gravy.
  3. For gravy, boil the potatoes. Slice the onions in regular size. Grind tomatoes to a fine paste. Crush the garlic and ginger. Slit the chilli into halves.
  4. Heat oil in a wok and add the crushed ginger- garlic and fry until the raw flavour disappears. Add sliced onions and then chili. When onions turn translucent add coriander powder, salt and turmeric. Sautè for a minute and add the pureed tomato and stir fry until the tomatoes start leaving oil.
  5. Mash the potatoes in water and add the mixture to the wok and bring it to boil. Once the gravy is ready add the pink lentil pakoras to the gravy and cook for 5-7 minutes. Garnish with chopped coriander leaves and serve hot with rice.
