ABOUT Chana Dal Aur Karela ( Gram Lentils With Bittergourd) RECIPE

It is a very famous Pakistani vegetarian dish. We all know both Pakistan and India have so much similarities in their cuisine and uses of spices, this dish in some parts of India is also considered as part of their cuisine, only difference is in the use of spices and ways of preparation.

Ingredients Serving: 4

  1. Dal- 1 cup
  2. Bitter gourd- 2 medium
  3. Onion- 2 (1 sliced thinly and 1 finely chopped)
  4. Cumin seeds - 1 tsp
  5. Ginger garlic paste - 1 tsp
  6. Tomatoes - 2 finely chopped
  7. Turmeric powder - ½ tsp
  8. Chilli powder - 1 tsp
  9. Kasuri methi - 2 tsp crushed
  10. Salt to taste
  11. Green chilli - 2 chopped
  12. Garam masala powder - ½ tsp
  13. Oil - 3 tbsp
  14. Water- around 1½ - 2 cups or as required

Instructions

  1. Soak the dal in some water while making the other ingredients ready.
  2. Scrape and deseed the bittergourd. Add little salt, mix well and leave it for 5-10 minutes. Rub well using hand. Wash thoroughly with water and squeeze nicely the water out and keep aside.
  3. Heat oil in a pan. Add the bitter gourd.
  4. Fry for about 5-10 mins till slightly crisp. Remove and keep aside.
  5. In the same oil fry the sliced onion till it starts to brown. Keep aside along the the fried bitter gourd.
  6. In the same oil add cumin seeds, onions, ginger garlic paste and fry till  light golden.
  7. Add the tomatoes, salt, turmeric powder, red chilli powder, kasuri methi, mix well and cook for a min or two.
  8. Add ½ cup water, mix well and cover the pan and cook on high flame till the oil comes on the surface.
  9. Add the dal, 1 cup water, mix well and bring to boil.
  10. Cover the pan and cook till the dal is cooked and water dries up. Please note that the dal need not turn mushy or lose its shape.
  11. Add the fried bittergourd, fried onions, green chillies, garam masala powder and mix well.
  12. Simmer for about 5 mins and take off the heat.
  13. Ready dish, perfect for rotis, chapattis, rice etc.
