Ingredients to make Stuffed potato basket

  • Chana dal (washed, soaked for 1 hour) - 1/2 cup
  • Potatoes (medium size) - 6-7 nos
  • Onions (finely sliced) - 2 big
  • Coriander powder - 1 tsp
  • Red chilli powder -1/2 tsp
  • Haldi powder - 1/2 tsp
  • Garam masala powder- 1/2 tsp
  • Khataai or aamchur powder - 1 tsp
  • Kalonji (nigella seed) - 1/2 tsp
  • Methidana (fenugreek seed) 1/2 tsp
  • Zeera - 1/2 tsp
  • Salt to taste
  • Oil - 4 tbsp

How to make Stuffed potato basket

  1. Dry roast zeera, kalonji, methidana on a tava without oil and grind to a coarse powder when cooled.
  2. Now peel the potatoes and scoop out the flesh from the middle of the potatoes and keep the flesh and potatoes in separate water. You can use spoon for scooping I have used peeler here.
  3. Heat 2 tbspn oil and fry sliced onions till pink in colour. Add coriander powder, chilly powder, haldi and fry for one minute.
  4. Now add the flesh and soaked chana dal, salt and 1 tbsp water and cover and cook on low flame till done.
  5. Add khataai or aamchur powder and switch off the flame.
  6. Now fill the potatoes with above mixture.
  7. Take a deep kadai and heat 2 tbsp oil and arrange all the stuffed potato basket and splash some water and remaining mixture. Sprinkle salt and cover and cook on low flame till potatoes becomes soft. At last sprinkle the methidana kalonji and zeera powder and cook for 5 more minutes and enjoy with roti or rice
  8. Scoop the potato from middle.
  9. Continue till forms like a basket.
