We Sindhi's call it Sai bhaji which means green leafy vegetable. Tastes better when cooked with chana dal. Its always paired with rice & aloo tuk or arbi tuk.

Ingredients Serving: 4
Spinach leaves- 1 bunch
1 big onion chopped
Dill/suaa leaves - 1/4 bunch
Chana dal (Bengal gram)- 1 cup
Potatoes- 1 (cut into small cubes)
Mix Vegetables - 1 cup (Gajar french beans patta ghobi)
Tomatoes - 3 (medium sized cut into small cubes)
Oil - 1tbsp
Cumin Seeds- 1 tsp
Green chillies - 2 (chopped)
Ginger- 1 piece (grated)
Garlic cloves - 4 chopped finely
Coriander powder - 2 tsp
Red chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Water - 2 to 3 cups
salt as per taste
Instructions
Clean all the leaves properly under running water, chop them and keep them aside.
Heat oil in a pressure cooker, add cumin seeds and fry for a minute. Add chopped onions, ginger, green chillies, garlic and fry on medium heat.
Add the veggies and tomatoes to it. Fry for 3-4 minus. Sprinkle coriander powder, red chilli powder, turmeric powder and mix well. Add all the chopped leaves and cook for 3-4 mins.
Add salt, mix well and cook for 5 mins on medium flame. Mix in the chana dal and water. Cover the pressure cooker with the lid,cook on low flame for four to five whistles to blow.
Switch off the flame and when the pressure reduces, open the lid and mash the whole thing with a churner. Transfer it to a serving bowl and serve hot.
Enjoy this exotic vegetarian dish with steamed rice. I have served it with arbi took(shallow fried) and boondi raita.
