ABOUT Slow cooked Mutton Curry on fast forward RECIPE

The best use a pressure cooker can be put to, you get the same results as slow cooking in a sealed pot on a coal fire.

Ingredients Serving: 6

  1. 1 kg mutton a mix of boneless and bone
  2. 1 & 1/2 cups - Yogurt
  3. 8 cloves garlic
  4. 3-4 medium onions
  5. 6 - cardamoms pods
  6. 2 - badi/large/black cardamom pods
  7. 6-8 cloves
  8. 3 inches of cinnamon
  9. 2 - bay leaves
  10. 1 tsp (or to taste) - kashmiri red chilli ppwder
  11. 2 to 3 tbsp - corriander powder
  12. 1 tbsp - cummin powder
  13. Salt to taste
  14. A pinch (1/4 tsp) - sugar
  15. 1 inch - ginger

Instructions

  1. Wash the meat. Rough-smash the garlic. Cut onions into thick slices. Bruise the green cardamoms and cinnamon. Now mix everything (except the ginger) together.
  2. If you have time let it sit around for an hour or longer. If you don't have time put into the pressure cooker right away.
  3. Set it on medium high heat until the pressure starts to build up, then turn down the flame. After 4 whistles turn the gas off. Once the pressure is released open the Pressure cooker. Your slow cooked mutton is ready to serve.
  4. Garnish with julienned ginger. Eat with rice or roti or pão or even sliced bread.
