Ingredients to make Sultani chana dal / chana dal bukhara

  • 200 gms soaked chana dal
  • One finely chopped onion
  • One tbspn ginger paste
  • One tblspn garlic paste
  • 100 gms curd
  • 1/2 cup milk
  • Roughly chopped pistachios, walnuts, cashew
  • Raisins 12-15
  • Slitted green chilli
  • Salt as per taste
  • Sugar 1/2 tsp
  • Ghee 2 tblspn
  • For tempering :-
  • Hing 1/2 tspn
  • 1 star anise
  • 2 cardamom
  • 1" cinnamon
  • 2 cloves
  • 1 tspn cumin
  • 1 red chilli
  • 1 bay leaves
  • Chopped coconut pieces

How to make Sultani chana dal / chana dal bukhara

  1. Pressure cook the dal for 4/5 whistle and let the cooker open it's own so that the grains should be cooked but not mashed over too much
  2. Heat ghee in a pan and add the ingredients for tempering, fry till the aroma comes out
  3. Add onions, fry till brown
  4. Add ginger and garlic, fry
  5. Then add the boiled dal, saute it few times
  6. Then mix curd and milk in a separate bowl and mix in that dal
  7. Stir well, add seasonings
  8. Cook with lid for 2-3 min
  9. Switch off the gas then add a little ghee and slitted green chilli
  10. Give a standard time.
  11. Add the chopped nuts all over the top and serve

My Tip:

You can add beresta and coriander leaves over the top to make more tasty
