Ingredients to make Panchratna daal

  • Mix daal- 1 cup consisting of below dals
  • Moong daal (green and yellow)
  • Urad daal (white and black)
  • Tuvar daal
  • Masoor daal
  • chana daal
  • ginger garlic green chilli paste- 1 tsp
  • onion- 1 big (chopped)
  • tomato- 1 big (chopped)
  • salt for taste
  • turmeric- 1/2 tsp
  • chilli powder- 1 tsp
  • Garam masala- 1 tsp
  • lemon juice- 1/2 tsp
  • ghee for tempering
  • cumin seeds- 1 tsp
  • coriander for garnishing

How to make Panchratna daal

  1. Soak daals for 30 minutes. Here are the daals I used.
  2. Take them in pressure cooker and add about 3 cups water and cook for 3 whistles.
  3. Take ghee in a pan. Add cumin seeds on heating. Add asafoetida and ginger garlic chilli paste.
  4. Saute for 30 seconds and add chopped onions.
  5. Saute till onions become translucent. Add tomatoes.
  6. Cover and cook for a minute till tomatoes become mushy.
  7. Now add dry spices like turmeric, chilli powder, salt, garam masala.
  8. Mix properly. Add the cooked daal. Adjust consistency of daal to medium.
  9. Add lemon juice and cook for 2 to 3 minutes.
  10. Garnish with coriander and serve hot with pulkas, jeera rice etc.

My Tip:

Do not overcook the dals.
