Ingredients to make Raw mango panna concentrate

  • Raw mangoes-500 gms
  • sugar/khadi sakar-500 gms
  • mint leaves-15 to 20
  • ginger-1 inch piece
  • fennel seeds-1 tbsp
  • cumin seeds-2 tsp
  • salt-2 tsp
  • Black salt -2 tsp
  • Black pepper-1 tsp

How to make Raw mango panna concentrate

  1. Wash and peel the mangoes. Cut roughly.
  2. Put these mango pieces in a cooker along with a cup of water.
  3. Take 2 whistles. The mango pieces become soft and mushy.
  4. Now let this cool.
  5. Roast cumin, fennel seeds and pepper slightly.
  6. After it cools, grind to powder in mixer.
  7. Blend the mango mixture with blender.
  8. Take sugar in a bowl and add a cup of water. Boil till sugar melts.
  9. Crush mint leaves and ginger in mixer.
  10. Now add both salt.
  11. Add blended mango puree to sugar syrup which is boiling and mix properly. Check for one string consistency and switch off gas.
  12. Add the pudina paste to this.
  13. Mix properly.
  14. Now add ground cumin, fennel seed powder to this.
  15. Mix properly and let this remain like this for 5 to 6 hours so that all flavors are absorbed.
  16. After 6 hours, pass it through strainer so that all rough pulp is removed and you get a smooth panna concentrate.
  17. Fill in dry glass bottles and refrigerate.
  18. When you want to serve take 1/3 of this concentrate in a glass. Add ice cubes and cold water..Stir properly and serve with fresh mint leaves if you wish.
  19. Enjoy the refreshing drink.
