ABOUT Semolina Sprouts Handvo RECIPE

Handvo is a traditional Gujarati savory cake and nutritious with loads of lentils and sprouts. The typical handvo is made of only vegetables but in my recipe have used sprouts to make it healthier. I have baked it in pressure cooker. It is served usually with green chutney and sweet chutney.

Ingredients Serving: 5

  1. Fine semolina -1 cup
  2. Rice - 1 tbsp
  3. Moong dal- 1 tbsp
  4. Channa dal- 1 tbsp
  5. Toor dal - 1 tbsp
  6. Urad dal - 1 tbsp
  7. Half cooked sprouts - 1/2 cup (green gram, mung beans, cowpeas)
  8. Peanut roasted - 2 tbsp
  9. Curd - 1 cup
  10. Baking soda - 1 tsp
  11. Turmeric powder- 1 tsp
  12. Red chilli powder- 2 tsp
  13. Hing- 1/2 tsp
  14. Grated ginger - 1 tsp
  15. Cinnamon powder - 1 tsp
  16. Lemon juice - 1/2 tsp
  17. Salt- 1 tsp
  18. Grated carrot- 1/2 cup
  19. Cabbage grated - 1/2 cup
  20. Sugar - 1 tbsp
  21. Roasted sesame seeds - 1 tbsp
  22. Water if required
  23. For seasoning :
  24. Coconut oil- 2 tbsp
  25. Mustard seeds – 1 tsp
  26. Curry leaves - 10-12 nos

Instructions

  1. Soak rice, channa dal, moong dal, toor dal, urad dal in water for 1 hour. Remove water and make a coarse paste.
  2. Now mix fine semolina, curd, dal paste, turmeric powder, red chilli powder. Keep aside for 5 mins.
  3. Now add ginger, salt, sprouts, peanuts, cinnamon powder, sugar, cabbage, carrot, little water if required. Whisk well.
  4. Now add lemon juice, baking soda. Mix well once. Pour the batter into greased tin and sprinkle roasted sesame seeds.
  5. Preheat the pressure cooker with sand of 1 inch thickness at bottom for 10 mins on high flame. Now lower the flame to medium, keep the baking tin with Handvo batter and close the lid without gasket and whistle. Bake for 25 minutes
  6. After 25 minutes, cool and cut into pieces. Do the seasoning with oil, mustard seeds and curry leaves. Serve hot with pudina chutney and sweet chutney
