Aromatic Fritters / Omavalli Bajji / Cuban Oregano Fritters

Ingredients

  • Oregano / Karpooravali leaves – 15 – 20
  • Besan (chickpea flour) – 1 cup
  • Rice flour – 1/2 cup
  • Chilli powder – 1 tsp
  • Asafoetida (Hing) a pinch
  • Baking soda – a pinch (optional)
  • Oil for frying
  • Salt to taste

Steps

  1. Use freshly plucked leaves. Wash under running water.
  2. In a bowl mix besan flour, rice flour, salt, chilli powder,asafoetida and mix well. If using baking soda add at this stage.
  3. Add required water to make batter to bajji batter consistency.
  4. Heat oil in a kadai , dip each leaf in the batter and fry till golden brown.
  5. Aromatic fritters is ready to serve.

    It is a common plant in many households as it is used in treating cold in babies. I don't think they sell these leaves in shops. You can get a sapling from nursery and plant your own......

    Adding rice flour gives crispness to bajji..... I didn't try with corn flour......

    Wow..really unique ingredient for fritters :D Also can we add cornflour instead of rice flour?
