ABOUT Vegetable Dal Dhokali RECIPE

Traditional dal dhokali also known as Varanphala/ Chakolya in different regions. A healthy twist by combination of different pulses with vegetable puree blended well with spices to give you a perfect one pot meal. Enjoy this with a dallop of ghee, papad and dry peanut chutney. Best for your little ones to give all veggies with high proteins. Taste bhi health bhi.

Ingredients Serving: 3

  1. For dough: whole wheat flour 2 large cups
  2. Vegetable mix, cleaned and cubed : 2 cups
  3. Red chilly powder 1 teaspoon
  4. Amchur, coriander cumin powder, turmeric powder 1/2 teaspoon each
  5. Cumin seeds& ajwain 1 teaspoon together
  6. Salt to taste
  7. For Dal: Toor/ arhar dal 1 cup
  8. Moong Dal 3/4 cup
  9. Masoor dal 1/2 cup
  10. Chana dal 1 tablespoon
  11. Turmeric powder 1 teaspoon
  12. For tempering: cumin and mustard seeds, asafoetida
  13. Curry leaves 5-6
  14. Whole red chilly dried 2-3
  15. urad dal 1 teaspoon
  16. Greenchilly 2
  17. For cooking: Onion, finely chopped 1/2 cup
  18. Tomato, finely chopped 1/2 cup
  19. Ginger garlic paste 2 teaspoon
  20. Peanuts fistful
  21. Jaggery 1 teaspoon
  22. Tamarind pulp 1 teaspoon
  23. Salt to taste
  24. Oil 1 teaspoon
  25. Coriander leaves for garnishing
  26. ghee 2 teaspoon

Instructions

  1. In pressure cooker cook all the cut vegetables with water till soft.
  2. Make a puree of it.
  3. Add in cumin seeds, ajwain seeds, salt, wheat flour to it.
  4. Make a soft dough and rest it for 15 minutes.
  5. Meanwhile, pressure cooks all the dals with turmeric powder and water.
  6. When dal is done, blend it smooth with a hand blender.
  7. Roll medium thick chapatis with the dough.
  8. Cut diamonds or any shapes out of the chapati and keep aside. This is Dhokali ready to go into Dal.
  9. Heat oil, add in the tempering ingredients along with, urad dal, slit green chillies and peanuts.
  10. Saute onion till translucent.
  11. Add ginger garlic paste.
  12. Add tomatoes and cook till soft
  13. Add boiled and blended dal to this.
  14. When dal starts to boil, add hot water.
  15. Add dough pieces to it.
  16. Let the dal Dhokali boil.
  17. Add jaggery and tamarind pulp
  18. Add salt to taste.
  19. Mix well and cook till dhokali is done.
  20. Serve with coriander leaves and a dollop of ghee over.
