Creamy Spinach Veggie Penne Pasta

Ingredients to make Creamy Spinach Veggie Penne Pasta

  • Penne pasta 250 gm
  • Full fat milk 2 cups
  • Spinach leaves 1 cup
  • Coriander &mint leaves 1/2 cup
  • Onion 1,thinly sliced
  • Tomato 1, diced
  • Corn kernels 1/2 cup
  • Carrot diced 1/2 cup
  • Paneer cubes 1 cup
  • Garlic paste 2 Tsp
  • Pizza mix 1 Tsp
  • Mixed herbs 1 Tsp
  • Grated cheese 1/4 cup
  • Slit green chillies 2
  • Whole wheat flour 1 Tsp
  • Cumin seeds 1/4 Tsp

How to make Creamy Spinach Veggie Penne Pasta

  1. Clean and cut spinach, coriander and mint leaves.
  2. Heat oil in a pan add cumin, garlic, wheat flour and saute.
  3. Add onion, green chillies and saute till onions are soft.
  4. To this add spinach, coriander, mint, carrot, corn, tomatoes, paneer and mix well.
  5. Cover and cook for 1 minute till vegetables are cooked.
  6. Add milk to this and mix well.
  7. Add pizza masala and herbs.
  8. Let the sauce boil. Remember to keep it watery as we are yet to cook pasta in that.
  9. Add penne pasta into it.
  10. Add salt to taste and mix well so as that the sauce coats well in pasta.
  11. Let this boil till pasta is cooked and soft.
  12. As the pasta cooks, the sauce thickens. Hence it is important to keep enough water in sauce.
  13. Check with a fork if pasta is soft.When cooked switch off serve hot with garlic bread.

My Tip:

Do not overcook the pasta.Use a good quality wheat pasta to get the perfect taste.
