Kambu Koozh ( Pearl Millet Drink)

Ingredients to make Kambu Koozh ( Pearl Millet Drink)

  • Kambu/ pearl millet 1 cup
  • Left over rice 1\2 cup
  • Butter milk 4 cup
  • Salt to taste
  • Small onions/shallots 4 to 5
  • Coriander leaves for garnishing
  • Water
  • Mango pieces-few
  • carrot slices-few

How to make Kambu Koozh ( Pearl Millet Drink)

  1. Soak one cup of pearl millet in water for 5 to 8 hours.
  2. To the left over rice add some water, mash it up and keep aside.
  3. Grind pearl millet in a mixer and filter it.
  4. The collected one is the millet milk.
  5. Heat a thick bottom pan with a cup of water.
  6. When water start boil, add millet milk and stir it continuously.
  7. Once it becomes semi thick switch off.
  8. Allow it to cool.
  9. Beat the butter milk and add finely chopped coriander, small onion, mango and carrot.
  10. Add the cooked millet to the butter milk.
  11. Add the rice mix and mix everything well.
  12. Check for salt and add.
  13. Keep in the refrigerator for one hour and serve chill.

My Tip:

instead of whole millet, we can use millet powder. For thin consistency, add more butter milk.
