Mutton Ghee Roast

Ingredients to make Mutton Ghee Roast

  • Mutton 1/2 kg
  • yogurt 2 Tbsp
  • ghee 1/2 cup
  • cumin seeds 1 tsp
  • fennel seeds 1 tsp.
  • pepper corn 1tsp
  • cinnamon 1 and 1/2 inch length
  • star anise 1
  • cloves 4
  • coriander seeds 1 tsp
  • Kashmiri Mirch 5-6
  • turmeric 1 tsp
  • salt to taste
  • ginger garlic paste 1 tbsp
  • ginger 1 inch
  • garlic Pods 4
  • lemon juice 2 tsp
  • curry leaves 7 to 8

How to make Mutton Ghee Roast

  1. Heat a pressure​ cooker, add 1/4 cup ghee, add ginger and garlic paste, salt and turmeric.
  2. Add the mutton and some water and cook for 4 to 5 whistles.
  3. Open and separate the mutton from broth.Save the broth for later.
  4. In a pan dry roast the fennel, cumin, Coriander, Kashmiri Mirch, cinnamon, star anise, cloves and pepper corns.
  5. Grind the dry roast with some water, ginger, garlic and lemon juice to a smooth paste.
  6. Heat the pan and add the remaining ghee. Add the masala paste with yogurt and fry till it starts leaving sides.
  7. Add the mutton broth and cook till ghee starts coming to the top.
  8. Add the mutton and roast with the masala for t-6 minutes. Then add the curry leaves and roast for another 5 minutes.
  9. Mutton Ghee roast is done. Enjoy with chapati or paratha

My Tip:

You can also use butter milk instead of yogurt.
