ABOUT Gondhoraj Ghol (King Lime Buttermilk - Bengali Style) RECIPE

Ghol is a light and frothy Bengali style Buttermilk that is known for its cooling properties is enjoyed especially during the hot summer months of Bengal. It can be sweet or salty, and to zing up the flavors, you may even add spices. My version is made using the famous 'Gondhoraj Lebu', or the King Lime that is native to West Bengal. Its fragrance and flavor is unparalleled and gives this Ghol a very royal touch indeed.

Ingredients Serving: 4

  1. Yogurt/Plain curd – 2 cups
  2. Ice water/Chilled water – 1 cup
  3. Sugar – 2 tbsp, adjust as per taste
  4. Rock salt/Sendha Namak – a pinch or two
  5. Gondhoraj lime zest – 1 tbsp
  6. Gondhoraj lime juice – of 1/2 a lime

Instructions

  1. In a blender, churn the Yogurt, sugar and black salt.
  2. After a minute, add the water and lime zest, whiz again until the Ghol is nice and frothy.
  3. Quickly add the Gondhoraj lime juice, use a spoon and stir. Don’t blend!
  4. Pour into serving glasses, top with Gondhoraj lime zest, and a wedge or two.
  5. Served chilled
