Gondhoraj Ghol (King Lime Buttermilk - Bengali Style)

Ingredients to make Gondhoraj Ghol (King Lime Buttermilk - Bengali Style)

  • yogurt/Plain curd – 2 cups
  • Ice water/Chilled water – 1 cup
  • sugar – 2 tbsp, adjust as per taste
  • Rock salt/sendha namak – a pinch or two
  • Gondhoraj lime zest – 1 tbsp
  • Gondhoraj lime juice – of 1/2 a lime

How to make Gondhoraj Ghol (King Lime Buttermilk - Bengali Style)

  1. In a blender, churn the Yogurt, sugar and black salt.
  2. After a minute, add the water and lime zest, whiz again until the Ghol is nice and frothy.
  3. Quickly add the Gondhoraj lime juice, use a spoon and stir. Don’t blend!
  4. Pour into serving glasses, top with Gondhoraj lime zest, and a wedge or two.
  5. Served chilled

My Tip:

You may skip the water and add crushed ice in place, but remember Ghol is very light and thin. Add the juice of the Gondhoraj Lime just before serving, and don't blend, just stir lightly.
