ABOUT Rabdi Malai Lassi RECIPE

All you need is fresh curd and sugar to make a large glass of sweet and thick Lassi, which is not only refreshing but also quite satiating.Here I come with my version of lassi rabdi malai marke.Sometimes, a glass of Lassi can be a mini meal itself! Happy summers!

Ingredients Serving: 2

  1. 2 cups chilled fresh curd
  2. 1 cup milk
  3. 10-12 tbsp sugar( add as per taste)
  4. 1 tsp cardamom powder
  5. Few strands of saffron (optional)
  6. 1/4 cup grated coconut
  7. 2 tbsp cream
  8. 8 tbsp Rabdi
  9. 1-2 tbsp chopped or sliced dry fruits

Instructions

  1. In a mortar, take 8 to 10 cardamom pods and crush them. remove the husk and crush the seeds. crush to a fine powder.
  2. In a bowl or pan, take 2 cups fresh chilled yoghurt. I used homemade curd.
  3. With a blender or wired whisk just mix the curd till it becomes smooth.
  4. Add 10 to 12 tbsp sugar or as required.
  5. Then add 1 cups chilled milk.You may add chilled water, instead of milk. The consistency of this lassi is near to thick. You can adjust consistency as per your taste by adding water
  6. Now churn the lassi mixture till you see a nice frothy layer on top. You can add everything into a blender and blend untill smooth
  7. Now add 1 tsp of the crushed cardamom powder.Mix again. Add icecubes and mix again
  8. Pour the lassi into tall glasses with 2 tbsp Rabdi in the bottom. Top the lassi with 2 tbsp malai and remaining Rabdi.
  9. Garnish lassi with grated coconut, a pinch or two of cardamom powder, 2 to 3 saffron strands and chopped dry fruits.
