Green Gazpacho

Ingredients to make Green Gazpacho

  • White sandwich bread slices 2
  • Spinach, chopped 2 cups
  • Coriander 1/3 cup
  • Bell pepper 1/3 cup
  • Pear medium 1
  • Spring onion, greens and whites separated 2 springs
  • Onion 1/3 cup
  • Cucumber 1/2 cup.
  • Zucchini 1/4 cup
  • Long red chillies 1 teaspoon
  • Lemon juice 2 tablespoons
  • Salt to taste
  • Sugar 2 teaspoons

How to make Green Gazpacho

  1. Wash and chop all vegetables and fruit, spinach and coriander.
  2. Chop chillies into very small pieces and keep aside.
  3. Place all ingredients except chillies and spring onion greens.
  4. Blend into a smooth paste with a little water.
  5. Test for salt. Adjust as per taste.
  6. Chill for a couple of hours.
  7. Pour into glasses.
  8. Sprinkle red chillies and spring onion greens on top.
My Tip: Can add a garlic pod and sprinkle red bell pepper instead of chilies.
