Ingredients to make Bharwa Baingan

  • Baby brinjals-250 gms
  • peanuts(roasted & ground)-1/2 cup
  • Grated coconut-1/2 cup
  • salt
  • turmeric-1/2 tsp
  • cumin powder-1 tsp
  • coriander powder-1 tsp
  • chilli powder-1 tsp
  • fennel powder-1 tsp
  • Garam masala-1/2 tsp
  • oil-1 tbsp
  • cumin seeds-1tsp
  • asafoetida-1 pinch
  • coriander for garnishing

How to make Bharwa Baingan

  1. Wash brinjals and remove the tops.Make a slit longitudinally.
  2. Mix all spices and peanut coconut mixture in a bowl.
  3. Stuff all brinjals with this mix.
  4. Take oil in a nonstick pan.Add cumin seeds and asafoetida.
  5. Now add stuffed brinjals.Sprinkle some water and cover.
  6. Let them cook for 5 minutes.Then turn the brinjals for uniform roasting and sprinkle remaining masala on the brinjals.
  7. Cover and cook for 3 minutes more and the vegetable will be ready.
  8. Garnish with coriander and serve hot with roti and daal rice.
