ABOUT American Chop Suey RECIPE

Crispy noodles in saucy gravy and fried egg.

Ingredients Serving: 4

  1. Egg noodles
  2. Capsicum
  3. Carrots
  4. Sweet corn or baby corn
  5. Boneless chicken cut into tiny bits
  6. Beans
  7. Soy sauce
  8. Tomato sauce
  9. Cornflour
  10. Egg
  11. Salt to taste
  12. Sugar
  13. Olive or vegetable oil

Instructions

  1. Boil the noodles and keep them aside by mixing in few drops of oil. This prevents it from sticking.
  2. For the gravy, add two teaspoons of oil in a wok and fry the chopped carrots, beans and capsicum. You can add any other vegetables of your choice. Stir fry
  3. Now add the small bits of boneless chicken. Season with some salt and pepper.
  4. Add in soy sauce, tomato sauce to the wok. Stir.
  5. Make a slurry with some cornflour and water. Add this to the wok. This will start reducing the sauce
  6. After the sauce is reduced, turn off the flame and keep it aside.
  7. Now pan fry the egg and cook the yolk as per your preference
  8. Now in the same wok add adequate amount of oil to deep fry the noodles. Let it heat. Now add the noodles to the wok in a circular fashion so that it takes the form of a nest. Fry it until golden brown.
  9. To plate this dish, first place the fried noodles on the plate. Then, add the gravy/sauce on the noodles. Top it with the fried egg. Now you have a plate of American chop Suey in front of you. Enjoy!!
