Mix Veg Tahiri

Ingredients to make Mix Veg Tahiri

  • Basmati rice - 2 1/4 cup
  • Veggies:
  • Potatoe - 1 big, carrot - 1,capsicum - 1 small
  • Corn - 1/4 cup, paneer - 125 gms
  • onions - 3 medium
  • tomatoes - 4
  • ginger garlic paste - 1 tbsp
  • ghee - 3 tbsp
  • Whole spices :
  • Choti elaichi - 5 to 6
  • Badi elaichi - 3
  • cinnamon sticks - 2
  • nutmeg powder - small pinch
  • Ainse flower - 1
  • bay leaves -4 to 5
  • coriander - 4 to 5 tbsp
  • mint leaves - 3 tbsp
  • green chillies - 5
  • Powder spices :
  • red chilli powder-2tsp
  • turmeric - 1/2 tsp
  • dhania jeera powder - 2tsp
  • lemon - 1/2
  • kewra water - few drops

How to make Mix Veg Tahiri

  1. First wash the rice nicely two to three times and soak.
  2. Chop the veggies and slice the onions, keep the ginger garlic paste ready.
  3. Take ghee in a pressure pan. Add the whole spices and saute.
  4. Now add the sliced onions and saute adding little salt
  5. Add the ginger garlic paste and saute till nice aroma. Now add the tomatoes and saute till softens.
  6. Now add the veggies, first the potatoes and carrots. Saute. Now add the corn, capsicum, paneer and mix.
  7. Add the spice powders and mix. Now goes in the coriander, pudina and green chillies. Mix well for few minutes.
  8. Now add the washed rice and lemon juice and mix well.
  9. Now add required water, few drops kewra water and salt. Check the seasoning and let it come to a boil.
  10. Lower the flame.
  11. Now cover with a lid and seal the sides with chapati dough.
  12. Or close the pressure pan without the whistle on.
  13. Leave for 20 mins in either case.
  14. Open and fluff it up.
  15. Serve hot.
