ABOUT Outengar Sorbot RECIPE

Outenga (Elephant Apple) is used in each and every part of Assam as a souring agent. It is usually used in different curries. Considering its flavour and properties, I thought of turning in to a Sharbat.

Ingredients Serving: 6

  1. 1 Outenga (Elephant Apple)
  2. 1 cup sugar
  3. 1.5 litre water
  4. 1 tbsp Lime juice
  5. Pinch of salt

Instructions

  1. Cut the Outenga in pieces.
  2. Add Outenga pieces and water in a pressure cooker and pressure cook it for 4 whistles. Let it cool down.
  3. Crush the cooked Outenga pieces with a wooden spatula. Now, take out the residual parts of the Outenga from the water.
  4. Add sugar into the Outenga mixed boiled water. Mix the sugar until it dissolves completely.
  5. Add the lime juice and salt. Mix well. Outengar Sorbot is ready.
  6. Refrigerate it for abt 4/5 hours before serving.
