Butter Chicken

Ingredients to make Butter Chicken

  • 500 grams boneless chicken cut into small pieces
  • 2-3 medium sized tomatoes chopped
  • 7-8 cashews soaked in hot water and blended into a paste
  • 2 medium sized onions sliced
  • 2 tablespoons of ginger garlic paste
  • 1 teaspoon black pepper powder
  • 1 tablespoon chilly powder
  • 2 teaspoons Garam masala
  • 2 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon fresh cream
  • 10-12 cumin seeds
  • Juice of half a Lime
  • Few leaves Kasoori methi
  • Salf to taste
  • Water

How to make Butter Chicken

  1. This step is to marinate the chicken pieces with pepper powder, chilly powder, salt and juice of lime. Mix well and keep it in the fridge for about 15-20 minutes
  2. Heat oil in a pan and then add cumin seeds. Let it crackle. Add the ginger garlic paste and a pinch of salt. Saute it. Now add the sliced onions, chopped tomatoes. After a minute add the chilly powder, turmeric powder and coriander powder. Let it cook for 5-7 minutes.
  3. Add water to the pan and simmer for another 5 minutes. Transfer the mixture to a bowl and blend it with a hand blender or a mixer if you want. Blend until it becomes a smooth paste
  4. After it has been blended to a smooth paste we need to get rid of the lumps to get a silky smooth paste. Strain this mixture with the help of a seed. You will notice the only thing left behind is the skin and seeds of the tomato
  5. Now it is time to take the marinated chicken out of the refrigerator. Heat oil in the same pan and fry the chicken pieces well.Keep this aside
  6. Remove excess oil from the pan used to fry the​ chicken and use only a little. Let it heat. Now add the smooth mixture to this pan and let it hear. If the gravy is too thick add a little water as required. Now add the cashew paste, coriander powder and garam masala
  7. Stir and then add the fried chicken pieces and let it simmer for another 3 minutes. Check the seasoning and add salt if required
  8. Transfer this to a bowl and drizzle fresh cream and few crushed leaves of Kasuri methi to garnish. Your butter chicken is done. Enjoy!!
My Tip: Straining the mixture is a better idea to get a smooth restaurant style gravy.
