Fusion Soup

Ingredients to make Fusion Soup

  • 2 - tomato roughly chopped
  • 1 - onion roughly chopped (optional)
  • 1/4 cup - cabbage shredded
  • 1/4 cup - carrot shredded
  • 1/4 cup - green pepper shredded
  • 1/4 cup - zucchinishredded
  • 3 cup water or vegetable broth
  • 1 tsp - ginger roughly chopped
  • 1/2 tsp - oil (optional)
  • 1/2 tsp - Italian herb
  • 1/2 tsp - basil herb
  • 1/2 tsp - vinegar or 1/2 tsp - lemon juice
  • 1/2 tsp - black pepper
  • salt to taste

How to make Fusion Soup

  1. Heat a non-stick pan, add ginger, tomato, onion and 1 cup water or vegetable broth.
  2. Cover the pan with the lid. Cook for 6-8 mins on medium gas. Keep it for cool down .Blend in a blender. Now tomato puree is ready
  3. Heat oil in a pan, add cabbage, carrot, zucchini, green pepper, salt , and black pepper Saute for 5 minutes.
  4. Add tomato puree in the pan. Add 3 cup water or broth, cook for 10-12 mins on medium flame.
  5. Season with Italian herbs and basil herbs, cook for two minutes more. Turn off the gas and add vinegar or lemon juice.
  6. Soup is hot and ready to serve with crispy noodles or bread crumbs or croutons. Enjoy healthy and yummy soup :)
My Tip: You can use any type of vegetables like cauliflower, brocolli, peas etc. Spices can adjust as per your taste. Add 1/2 tbsp corn starch with 2 tbsp water for a thick soup.You can garnish with coriander or basil leaves. For richer you can add cream.Instead of oil you can use also butter (I prefer olive oil always to cook ).
