Ingredients Serving: 4

  1. Idly - 8 - 10, cubed
  2. Onions - 1 , thinly sliced
  3. Tomatoes - 2, finely chopped
  4. Bell peppers (green, yellow and red) - finely chopped
  5. Turmeric powder - 1 tsp
  6. Red Chilly powder - 1 tsp
  7. Coriander powder - 1 tsp
  8. Cumin seed powder - 1 tsp
  9. Garam Masala Powder - 1 tsp
  10. Tomato Ketchup - 1 tbsp
  11. Sugar - a small pinch
  12. Salt to taste
  13. Oil - 1/2 tbsp
  14. Ghee - 1/2 tbsp
  15. Ginger garlic paste - 2 tsp

Instructions

  1. In a pan, heat the ghee and oil. Once heated, add the pieces of idlis and saute for a couple of minutes, until it begins to crisp up a bit and remove it on a plate.
  2. You can deep fry them in oil if you wish, but this tastes even better.
  3. In the same pan, add the sliced onions, ginger garlic paste, a small pinch of sugar and saute for a couple of minutes.
  4. Add the tomatoes and cook until mushy.
  5. Add the bell peppers, all the spices, some ketchup and salt and cook for a couple more minutes.
  6. Once everything begins to come together, add the idlis, toss well and take it off the heat after a minute.
  7. Serve hot. This tastes great just on its own or you could serve it with some chilled yogurt raita.
