ABOUT Almond Meal Thumbprint Cookies RECIPE

These cookies bake into simple, buttery, fragrant and sweet bites and almond meal lends a beautiful nutty taste to make these cookies just an excellent companion to your evening tea or to be had as is.

Ingredients Serving: 4

  1. Almond meal – 1 cup (ground almonds with skin to fine powder)
  2. All purpose flour – 1/4 cup
  3. Granulated white sugar – 1/4 cup
  4. Unsalted butter – 1/4 cup at room temperature
  5. Egg yolk – 1
  6. Salt – a pinch
  7. Vanilla essence – 1 tsp
  8. Melted chocolate – 1/4 cup

Instructions

  1. Add almond meal, all purpose flour and salt to a bowl and mix well.
  2. In a bowl of standing mixer fitted with paddle attachment, cream butter and sugar for nearly 3-4 minutes.
  3. Slowly add egg yolk and vanilla. Mix until combined. Now start adding the dry ingredients and beat until the ingredients get well combined and dough turns soft.
  4. Wrap the dough and place it in the refrigerator to chill for 30 minutes. Preheat your oven to 180C and line parchment paper in baking tray.
  5. Take out the dough from the refrigerator and divide into small balls.
  6. Line them on a baking sheet and using your thumb or back of small measuring spoon, gently make a pocket at the center.
  7. Fill this pocket with melted chocolate and bake for 10-12 minutes or until the cookies are set. Carefully remove from oven and leave the cookies to cool.
