Crispy Dosa

Ingredients to make Crispy Dosa

  • Rice 3 cups
  • Urad dal /black gram skinned lentil 1 cup
  • Fenugreek seeds 1 tsp
  • Poha /beaten Rice 1 handfull
  • Salt
  • Onion potato masala:
  • 4 boiled, mashed potatoes
  • 1 onion
  • 1 cup boiled peas
  • 2 Green chillies slit
  • 1 table spoon grated ginger
  • 7 to 8 chopped curry leaves
  • Oil
  • 1 tea spoon chana dal /yellow gram
  • 1 tea spoon urad dal
  • 1 tea spoon cumin seeds
  • 1 tea spoon mustard seeds
  • 1 tea spoon Turmeric powder
  • 1 tea spoon garam masala powder
  • 1 tea spoon red chilli powder
  • 1 tea spoon coriander powder
  • 1 tea spoon kitchen king masala
  • salt
  • 1/4tsp Hing

How to make Crispy Dosa

  1. Wash both rice and dal separately and soak overnight or at least 5 to 6 hours in separate bowls add 1 Tsp methi /fenugreek seeds in Dal.
  2. Then grind to make a smooth paste add 1 full fist Poha in rice and give it a nice churn.
  3. Add salt. mix and allow it to ferment for 6-8 hours.
  4. After fermentation, take full 1 ladle of the batter spread evenly over heated non-stick Tawa.
  5. Swirl 1 tbsp oil on all the sides of dosa
  6. Place sufficient amount of onion potato veg in the middle
  7. Fold dosa and serve hot with sambhar and chutney.
  8. For onion potato veg:
  9. Heat oil, crackle mustard, Hing, methi, channa dal, urad dal, ginger, green chilly, and curry leaves
  10. Saute onion juliennes till translucent and add peas cook till soft
  11. Add all spice powders.
  12. Then add boiled and roughly mashed potatoes cook till mixed up and roast all the ingredients evenly.

My Tip:

Add poha in rice to make the dosa more crispy
