Tofu with soya sauce

Ingredients to make Tofu with soya sauce

  • 450 grams tofu cut into 3/4-inch cubes
  • 1 medium-sized onion finely chopped
  • 80 grams unsalted cashews
  • 1 tbsp curry powder (fenugreek cumin coriander turmeric)
  • 2 tablespoons soya sauce
  • 2 tablespoons oil
  • 227ml unsweetened coconut milk
  • Salt and Pepper to taste

How to make Tofu with soya sauce

  1. Take a large pan and put it on medium heat, pour in the oil.
  2. Once the oil is hot, put in the onion and cook till they turn light brown in colour.
  3. Next, put in the curry powder, give it a stir then put in the cashew nuts. Stir and cook for another minute.
  4. Now pour in the coconut milk. Bring this mixture to a boil and then lower the heat. Then add the tofu, mix well and let it simmer and cook for 3-4 minutes.
  5. Pour in the soya sauce, adjust the seasoning with salt and pepper as per your taste.
  6. Serve alongside freshly steamed rice.
