ABOUT Lentils and Plantain Flower Kolas RECIPE

The healthy Plantain flowers, when mixed with soaked lentils and spices, give awesome taste. Usually, these Kolas are deep fried where as here I have shallow fried them by making them in Appe pan to make it more healthy.

Ingredients Serving: 6

  1. Chopped Plantain / Banana flowers 2 cups
  2. Finely chopped onions 1 cup
  3. Finely chopped green chillies 2 tea spoons
  4. Grated Ginger 1 tea spoon
  5. Bengal gram / Kadalai Paruppu 2 cups
  6. Toor dhal 2 tbsp
  7. Urad dal 1 tbsp
  8. Fennel seeds / Saunf / Sombu 2 tea spoons
  9. Red Chilies 3
  10. Salt to taste
  11. Finely chopped curry leaves and coriander leaves
  12. Oil 3 tbsp

Instructions

  1. The individual flowers should be taken out and the projected part of the flower should be rubbed gently.
  2. Then remove the stamen part of the each flower out.
  3. Then collect the flowers and chop them finely and put them in buttermilk water.
  4. Add 1 tbsp of buttermilk in water and this prevents the vegetable from becoming black
  5. Soak all the dhals given and red chilies in water for two hours. Drain the water and grind them very coarsely with required salt.
  6. Add the chopped onions, Vazhaipoo, Green chillies, ginger, fennel seeds, coriander leaves and curry leaves and mix well.
  7. Heat the Appe Pan (Kuzhipaniyara Pan) and fill each crater with half tea spoon of oil and spread it well.
  8. Take lemon size balls of the Vada mix and place them one by one in the Appe pan.
  9. Let them get fried well on all sides in medium flame. Just roll them around to enable them to get evenly fried.
  10. If needed sprinkle some oil. Once they become golden brown balls take them out and serve hot.
