Ingredients Serving: 2

  1. 5 eggs
  2. Half bell pepper
  3. 1 medium sized onion
  4. 1.5 cups pureed tomatoes
  5. Everyday spices
  6. Cabbage(optional)

Instructions

  1. Chop the onions, slice green chilies, dice the peppers and of any additional veggies need to be added. I sometimes use cabbage and potatoes
  2. Heat oil in a pan and add chilies and onions
  3. Cook until onions become translucent. Add rest of the veggies. I prefer just bell peppers as they are easy and quick to cook
  4. Add turmeric, salt, garam masala, chilli powder
  5. Cook for few mins and break eggs separately on the flattened cooked veggies in the pan
  6. Sprinkle some black pepper and salt on the eggs
  7. I break the yellow part using fork but if you like a thick yellow, just let them sit as is and cover the pan
  8. Turn down the flame to minimum and cook until there is no liquid at the top
  9. Shakshuka is ready to be served with Phulka/paratha
