Laau Dalma- Moong Dal with Bottle Gourd and Potato

Ingredients to make Laau Dalma- Moong Dal with Bottle Gourd and Potato

  • 1/2 cup moong dal
  • 1 potato cubed
  • 2 cups cubed bottle gourd cubed
  • 1/2tsp turmeric powder
  • salt as per taste
  • For tempering:
  • 1 tbsp ghee
  • 1/2 tsp cumin seeds
  • 2 dry red chili
  • 1 bay leaf
  • 1 inch ginger grated
  • 2 tsp roasted cumin and red chili powder
  • 1 tsp sugar
  • Chopped coriander leaves and grated coconut for garnishing

How to make Laau Dalma- Moong Dal with Bottle Gourd and Potato

  1. Dry roast the moong dal in a pan and make sure you don't brown it.Stir continuously till you get a nice aroma. Take it out.Once cool wash the dal with water and keep aside.
  2. Chop the bottle gourd and potato in big size cubes.
  3. In a heavy bottomed pan, pour 2 cups water along with salt and turmeric powder. Bring it to a boil and then add the potato and bottle gourd cubes.
  4. Once they are half done, add the moong dal and cook till all are done perfectly. Take away from heat and keep aside.
  5. For the tempering, heat a pan and add 1 tbsp ghee in it. Once hot, add the cumin seeds. Once it splutters, add the dry red chilies, bay leaf, and grated ginger into it.
  6. Saute for 30 to 40 secs and then add cooked dal and vegetables immediately. Add a tsp of sugar and check the seasoning, add salt if required.
  7. Add roasted cumin and dry chili powder on the top, garnish with coriander leaves and grated coconut.
  8. Serve with roti, rice of your choice.

My Tip:

To make roasted cumin & dry chili powder, dry roast 1 tbsp cumin and 2 no of dry red chili make a coarse powder using a grinder.
