Ingredients to make Chhole Masala With Puri

  • kabuli chana 4 cups
  • Finely chopped tomatoes 3 cups
  • Finely chopped onion 1
  • onion puree 2 cups
  • garlic paste 1 teaspoon
  • Grated ginger 2 teaspoons
  • Finely chopped green chilly as per taste
  • oil 1 tablespoon
  • jeera 2 teaspoons
  • haldi powder 1/2 teaspoon
  • red chilly powder 1 teaspoon
  • coriander powder 1 teaspoon
  • Dry anardana powder 1 teaspoon
  • tamarind pulp 1 teaspoon
  • Garam masala 1 teaspoon
  • Crushed black pepper 1/2 teaspoon
  • Crushed cloves 3 to 4
  • salt to taste
  • coriander chopped for garnishing

How to make Chhole Masala With Puri

  1. Wash chana and soak in sufficient water for at least 5 to 6 hours (or overnight )
  2. Add salt and preesure cook chana for 4 to 5 whistles
  3. Heat oil in a pan and crackle jeera
  4. Add Haldi, Mirchi and coriander powder
  5. Sauté till aroma comes and add finely chopped onion and sauté till golden brown ...add crushed garlic and chopped green chilly too
  6. Add onion and tomato paste and sauté till oil separates
  7. Add all masala, Anardana powder, crushed black pepper and clove
  8. Add boiled chana, Imli pulp and adjust salt and water
  9. Cook covered for next 5 to 10 minutes on low heat
  10. Chhole masala is ready to serve,garnish with chopped coriander

My Tip:

To fasten the cooking of chana, add a pinch of soda while boiling it
