Ingredients Serving: 5

  1. Brown rice 1 cup
  2. Black urad dal (Whole) 1/8 cup
  3. Soya beans (White) 1/8 cup
  4. Ragi 1/8 cup
  5. Green grams 1/4 cup
  6. White sorghum/Cholam 1/4 cup
  7. Cow peas(Thattam Payar) 1/4 cup
  8. Salt to taste
  9. oil for making dosa

Instructions

  1. Except for oil and salt mix all the above ingredients in a vessel, wash them well and soak in water for at least 6 hours.
  2. After six hours grind them to a fine batter in a blender or wet grinder adding required salt.
  3. This batter does not need eight hours of fermentation. Just 4 hours is enough.
  4. After four hours refrigerate the batter and make dosa whenever it is needed.
  5. I made small thick dosas which resulted with browny crispy edges and soft in the middle.
  6. The taste was simply superb. I served it with tomato chutney.
