Dimer Khichuri

Ingredients to make Dimer Khichuri

  • 150 gms Kamini atop or Gobindavog rice
  • 150 gms split moong dal
  • 1 handfull chana dal
  • 5 duck eggs
  • 1 pinch baking soda
  • 1/2 cup Ghee
  • ginger 2"
  • garlic cloves 8/9
  • onion finely sliced 2
  • cumin 1 tsp
  • green chilies 4/5
  • Turmeric powder 1 tsp
  • Red chilly powder 1 tsp
  • coriander powder 1 tsp
  • Coriander leaves 1 cup
  • kasuri methi one handfull
  • garam masala paste (3 cardamoms,1"cinnamon, 4/5 cloves)
  • whole garam masala (same)
  • Tej patta 2
  • Dried red chilies 2
  • Peas 1/2 cup

How to make Dimer Khichuri

  1. Soak rice and chana dal for 15 min
  2. Heat half of the ghee in a pan, add whole garam masala( slit the cardamom slightly), fry the moong and chana dal, then add soaked rice
  3. Keep double portion of water of the rice and dal, bring to a boil then add the fried rice & dal & the peas
  4. Switch off just after a boil, add salt and sugar keep with a lid
  5. Make a paste of ginger, green chilies, cumin, add the powdered spices and make a smooth paste
  6. Now make Beretta from onion, keep this out
  7. now in the same add the Tej Patta, cumin, red chilly then add spices paste after the smoke down, fry well, now add beaten eggs(mix with salt, chopped green chilly, one pinch, pepper powder, don't fry too much
  8. Then add coriander leaves and Kasuri methi.
  9. At last mix, the boiled rice and daal into this, stir well.
  10. Again add some chopped coriander leaves and garam masala paste, berest, drizzle some ghee over the top and cover with a lid for some time.

My Tip:

Don't over fry the eggs, mix it with khichuri when it is half done.
