ABOUT Rajma Cheese Croquettes RECIPE

This is a healthier take on classic potato croquettes

Ingredients Serving: 4

  1. 1 cup Rajma (kidney beans)
  2. 2 Eggs (separated)
  3. Oil for frying
  4. 100 gms Mozzarella Cheese
  5. 1/2 cup bread crumbs
  6. Salt to taste
  7. 1 1/2tsp oregano/Italian seasoning
  8. 1 tsp black pepper powder
  9. garlic 8-10 cloves, finely chopped
  10. 3 tbsp all purpose flour

Instructions

  1. Soak rajma for 6-8 hours or overnight.
  2. Boil rajma with sufficient salt and water in a pressure cooker till soft but not overly soft.
  3. Cut cheese into cubes of side 2 cm.
  4. Mash with fork or food processor when cooled.
  5. Add pepper, oregano, garlic, egg yolk, and flour. Add salt if needed.
  6. Make small spheres with 1 tbsp of dough. Flatten dough and place cheese in the middle. Roll into the barrel like shape. Set aside
  7. Lightly whip the egg whites. Pour the breadcrumbs into a small plate or bowl.
  8. Crumbing- maintain one hand for wet activities and one hand for dry. Pour oil into kadhai and heat it up.
  9. Using one hand take croquette and coat with egg white. With same hand drop into breadcrumbs. Using the other hand, coat with bread crumbs.
  10. Do the same for 3-4 croquettes and fry as one batch in hot oil till golden-brown. Take out from oil and place on paper towel.
  11. Let cool for 5-10 mins and serve with ketchup.
