Ingredients Serving: 5

  1. For stuffing : Pinto beans - 300 grams
  2. Onions, finely chopped - 2
  3. Tomatoes, finely chopped - 3
  4. Oil - 2 teaspoons
  5. Burrito seasoning - 3 tablespoons
  6. Salt - to taste
  7. Pinch of Baking soda
  8. For Dough : Wheat flour - 1 cup
  9. Maida - 1 cup
  10. Ghee - 2 tablespoons
  11. Baking powder - 1 teaspoon
  12. Salt - To taste
  13. Water - to knead the dough
  14. For Assembling : Mozzarella cheese, lettuce, onions, tomatoes, olives

Instructions

  1. Soak Pinto beans for 8 hours or overnight. Pressure cook the soaked and washed beans with little water and a pinch of soda (3 to 4 whistles). Drain the water once cool.
  2. Heat oil in a pan and saute chopped onions and tomatoes for 2 minutes. Add mashed boiled pinto beans and cook for 3 minutes. season with salt and Burrito seasoning. Mix well.
  3. Cook it on low flame till the mixture gets dried up. Let it cool.
  4. For the dough, mix wheat flour, maida, ghee, salt, baking powder and water. Prepare the dough like that of chapati. Let it rest for 3 hours.
  5. Make 6 balls from the dough and roll up large and slight thick chapati. Cook it like chapati.
  6. 10. On a tava take 1/2 teaspoon oil and just heat chapati on both the sides for 20 seconds.
  7. Take chapati in a plate put beans mixture, shredded mozzarella cheese, lettuce, onions, tomatoes and olives. Roll it up. Serve with raw salsa sauce.
