Mexican Bean Fajita

Ingredients to make Mexican Bean Fajita

  • For the dough : 100 gm - Refined flour (Maida)
  • 1/4 teaspoon - Salt
  • 11/2 teaspoon - Butter
  • Little water to knead the dough
  • For Bean Filling : 1/2 Cup - Rajma (soaked overnight)
  • 1/2 cup - tomato, chopped
  • 1- Onion, sliced
  • 1/2 teaspoon - Red chili powder
  • 1/4 teaspoon - Cumin powder
  • 1 teaspoon - Oil
  • Salt to taste
  • Other Filling Ingredients : 4 tablespoon - Processed Cheese
  • 1 - Onion, sliced
  • 1 - Small capsicum, sliced
  • 1 - Tomato, sliced
  • 1/2 teaspoon - Green chili
  • 4-6 tablespoon - Green moong sprout
  • Salt, lemon juice for sprinkling
  • Tomato Salsa - 1 Cup - Tomato puree
  • 1 - Small onion, finely chopped
  • 1/4 teaspoon - Red chili powder
  • 1/4 teaspoon - Dried oregano
  • 1/4 teaspoon - Sugar
  • 1/4 teaspoon - Salt
  • 1 tablespoon - Oil
  • 1 - Green chili finely chopped

How to make Mexican Bean Fajita

  1. Make the dough with maida and water. With a rolling pin make some rotis and cook on tawa with little butter till brown spots appear. Keep aside.
  2. Pressure cook the beans till soft for the filling.
  3. Add oil in a pan. Add the chopped onion and tomato. Cook for 2 minutes. Add the cooked beans, salt and other spices and cook till the mixture is semi dry, mash the beans coarsely.
  4. For the Salsa, boil the tomatoes for 5 minutes, drain the water and remove the tomato skin and make a paste.
  5. Heat oil in a pan and fry the onion. Add the other ingredients of salsa and cook for 5 minutes.
  6. Assembling the Fajita : Spread some tomato salsa on the roti. Place bean filling, other filling ingredients. Top with cheese and tomato salsa. Fold from both sides to make a roll.
  7. Grill until the cheese melts. Serve hot.
My Tip: Always make some extra helping as they will be finished in minutes.
