ABOUT Three Coarse Meal With One Main Ingredient RECIPE

A main dish, an accompaniment and two snacks all with main ingredient : Urad Dal. Snacks: Urad Daal Pakodi and Kachoriyan, Main Dish: Urad Pakodi Ki Sabzi With Urad Gravy, Accompaniment : Urad Daal Dahi Bade.

Ingredients Serving: 4

  1. Urad daal dhuli 300 gm. (150gms for dahi bade and Pakodi, 150grams for kachori and sabzi),
  2. Hing (1/2 tsp for each dish)
  3. Cloves or laung 10-12 nos.
  4. Cumin 1 tablespoon
  5. Black pepper 1 tablespoons
  6. Fennel seeds 1/2 tspn
  7. 1 tej patta
  8. Baking powder 1/2 tspn
  9. Red chilli powder 1/2 tablespoons in each
  10. Coriander powder 1 tablespoons
  11. Turmeric powder 1 tablespoons
  12. Gram masala powder 1/2 tablespoons
  13. Green Chilli 4-5
  14. Onion 2 medium size
  15. Garlic 4-5 cloves
  16. Whole wheat flour for kachori 400gm
  17. Oil for deep drying and saute
  18. Salt according to taste
  19. Kishmish and chiraunji 5gm for dahi bade
  20. Dahi 200gm
  21. Coriander leaves 1 tablespoons for garnish
  22. Pomegranate 1 cup
  23. Honey 2 tablespoons
  24. Tomato ketchup 1 tablespoons

Instructions

  1. Soak urad daal in water for 6-8 hours.
  2. Wash soaked urad daal 3-4 times in clean water and coursly grind the same in grinder using 2-3 spoon water.
  3. Take equal protions of this paste in two vessels keep asides.
  4. For pakori and dahi bade :
  5. Heat a wok add oil for deep frying
  6. Mean while the oil is being hot enough to deep fry, take one vessel of urad paste add black pepper powder 1/2 table spoon, salt as per tastre, hing a pinch, chopped green chillies 1/2 tablespoons, red chilli powder 1/2 tspns, cumin powder 1/2 tablespoons and mix well.
  7. Take small portion of this mixture using figures and put it in heated wok for making pakori saute till light brown take out and keep aside, like this make pakoris of half of this mixture , rest will use in makings bade.
  8. Now using same mixture will make bade. For this tale two tablespoons of material in hand , put kishmish and chiraunji in between and cover with other hand and press it .If the paste is sticking in your hand you can dip your​ hand in water and then take paste in hand.
  9. Now put this in wok for deep frying like same procedure make other bade.
  10. Put bade in warm water for few minutes so that it gets soft.
  11. Take dahi in bowl add salt as per taste, roasted cumin powder , red chilli powder , sugar if you want little sweet, add honey two tablespoons, tomato ketchup 1 tablespoons, fresh pomegranate and mix well then add soaked bade. Dahi bade is ready.
  12. Now our half of recipe is done.
  13. You can enjoy dry bade and pakoris with tea also.
  14. Now, we come to the main dish i.e. kachori and sabzi.
  15. For this take other vessel of urad daal paste.
  16. Heat the same wok with the same oil in which we made pakoris .
  17. Only two tablespoons of oil is enough add this paste of urad daal in this mix well in low flame. Add cumin powder 1/2 tablespoons, black pepper powder 1/2 tablespoons, garam masala 1/2 tablespoons, salt and red chilli powder as per taste stirr continuously until complete water get dried and paste converted in golden brown.
  18. Keep out in a bowl and let it cool in room temperature.
  19. Heat a wok add oil for deep frying. Until it gets hot we make dough for kachori.
  20. For kachori , take flour add one tablespoon of oil and 1/2 table spoons of salt and make a soft dough.
  21. Take small portion in hand roll and press for stuff use the same fried urad one tablespoon and stuff it the cover and make small pooris.
  22. Deep fry until golden brown, take out and keep aside.
  23. Like this make kachori of half of this mixture rest will use in sabzi Garvy.
  24. Kachori is ready.
  25. Now for gravy, grind onion, garlic, cumin seeds, black pepper and cloves ,cardamom and grind together making thick paste.
  26. In a wok put two tablespoons of oil add tej patta and a pinch hing, saute for few second add the ready onion garlic paste.
  27. Add turmeric powder, chilli powder, coriander powder, garam masala powder and stir well.
  28. Stir continuously until the paste starts releasing oil now add rest of the urad daal fried paste and stir continuously and mix well.
  29. Add water and stir it to get smooth gravy and a little salt because we have add salt in urad paste already .
  30. Stir to boil then add in boiling gravy add pakoris i.e. we have already made. Stir fir 5 minutes.
  31. Garnish with coriander leaves.
  32. Sabzi is also done.
  33. So let's enjoy this with your family.
