Ingredients Serving: 3

  1. Boiled Potatoes - 2
  2. Onion, chopped - 1
  3. Capsicum, chopped - 1
  4. Green peas, mashed - 1/2 cup
  5. Fenugreek leaves, chopped - 1 cup
  6. Coriander leaves, chopped - 1/2 cup
  7. Green chilli, chopped - 2
  8. Ginger garlic paste - 1tsp
  9. Wheat flour 2 - cup
  10. Fennel seeds - 1tsp
  11. Cumin seeds - 1tsp
  12. Turmeric powder - 2tsp
  13. Red chilli powder - 2tsp
  14. Carom seeds - 1tsp
  15. Oil - 2tsp
  16. Dry mango powder - 1tsp
  17. Garam masala - 1tsp
  18. Butter - 1/4 cup
  19. Salt to taste

Instructions

  1. In a bowl add wheat flour, salt, turmeric powder, red chilli powder, fennel seeds, carom seeds, a little bit of moyan and knead the dough.
  2. Rest the dough for 15 minutes.
  3. Heat the oil in a pan, add ginger garlic paste, cumin seeds, and onion. Saute it a bit then add capsicum. Add fenugreek leaves and peas and cook them well. Add mashed potatoes. Add garam masala, dry Mango Powder, coriander leaves and salt. Mix. Remove from gas and keep the stuffing aside to cool.
  4. Make equally small balls of the dough. take a ball, press in the middle to make a well, add stuffing and close from all sides. Roll into a round paratha.
  5. Cook it from both the sides till well done. Apply butter for crispiness. Place in a plate when done. Make all the parathas like this. Serve hot.
