Ingredients Serving: 2

  1. Oil - 1 tbsp
  2. 1/2 cup - medium size onion diced finely
  3. 2-3 - cloves of garlic
  4. 1 - medium sized red Capsicum, diced finely
  5. 3 - ripe red tomatoes, diced finely
  6. 2 tbsp - tomato ketchup
  7. 1 tsp - cumin powder
  8. 1 tsp - red chili powder
  9. Salt and pepper to taste
  10. 2-3 - eggs

Instructions

  1. In a large pan, heat oil and saute onions, garlic, capsicum and cook for 5-7 mins till they soften.
  2. Now add diced tomatoes and tomato ketchup. Cook for another 5 mins. Add all the spices and seasonings.
  3. Crack the eggs into the pan, one at a time over the mixture.
  4. Cover the pan and allow it to cook for another 5-6 minutes.
  5. Make sure the sauce does not burn and reduce in quantity.
  6. Garnish with coriander and serve it directly from the pan
