ABOUT Easy Egg Curry RECIPE

This is another easy dish that my husband has taught me to cook. It is easy to prepare and gets ready quickly after a long day of work when all you want to do is have a hearty meal and rest.

Ingredients Serving: 2

  1. 4 eggs (hard boiled)
  2. 4 tablespoons oil
  3. 1 tablespoon ginger garlic paste
  4. 1/4 teaspoon red chilli powder
  5. 1 1/2 teaspoon coriander powder
  6. 1/2 teaspoon Turmeric powder
  7. 1 teaspoon garam masala powder
  8. 1 green chilli (chopped)
  9. 1 teaspoon cumin seeds
  10. 1 big tomato (finely chopped)
  11. 2 big onions (thinly sliced)
  12. Salt to taste

Instructions

  1. Remove the eggshells from the eggs. Take a knife and poke the eggs so that they have small slits all over. Do not slice or chop. Just poke.
  2. In a pan heat oil, add the eggs one at a time and fry till a thin golden crust is formed on all sides. Remove and keep aside.
  3. In the same oil add cumin seeds and chillies. When cumin seeds splutter, add onion and salt. Cover and cook till onions turn soft.
  4. Add tomatoes and saute. Add the coriander powder,garam masala powder, turmeric and red chilli powder.
  5. Add ginger garlic paste. Saute till the raw smell of ginger garlic goes away. Add the eggs and a little water. Cover and cook for few minutes.
  6. Stir once. Add 1 cup water. Cover and cook for 10 minutes.
