Ingredients Serving: 3

  1. Pumpkin full- 1kg
  2. Meethi daana - 1tsp
  3. Haldi powder - 1tsp
  4. Degi mirch - 2tsp
  5. Dhaniya powder - 1tsp
  6. Amchur powder - 11/2tsp
  7. Garam masala - 2tsp
  8. For Tadka : Ghee - 1 tbs
  9. 1- Onion, chopped
  10. 2 - tomatoes, chopped
  11. 1tsp - ginger garlic paste
  12. 1Tbs - kaju paste
  13. 1tbs - fresh cream
  14. 20 - grapes
  15. 1/2cup - pomegranate pearls
  16. 10-10 - kaju, badam (fried)
  17. 1tbs - chopped coriander

Instructions

  1. Cut top portion of pumpkin and scoop out the flesh, chop and boil it.
  2. Heat ghee in a kadhayi and fry the onions till golden brown. Add ginger garlic paste, hing, meethi daana and all the other masalas.
  3. Add tomatoes, kaju paste, fresh cream, boiled pumpkin, grapes, pomegranate pearls and fried kaju badam. Mix well and take it off the stove.
  4. Fill the prepared vegetable in the pumpkin shell. Keep the shahi vegetable filled pumpkin shell inside the cooker on low flame, cook for 5 min.
  5. Turn of the gas and take the pumpkin out carefully. Garnish with more pomegranate seeds and serve.
