Ingredients to make Mixed Vegetable Puli Kootu

  • I cup cooked toovar dal
  • 2 cups vegetables, mixed ( 1 brinjal medium,1 potato,small, sweet potato, drumstick, raw banana, cluster beans, broad beans,carrot, lauki, red pumpkin )
  • Tamarind soaked in water - a walnut size of piece
  • Ground nuts 1 tbsp
  • For tempering : 1 tsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp chana dal
  • Asfoetida
  • Curry and coriander leaves
  • 1 tbsp coconut fresh or dedicated
  • 1 tbsp sambar powder
  • 1/4 tsp turmeric powder

How to make Mixed Vegetable Puli Kootu

  1. In a pressure cooker add all the vegetables along with ground nuts and turmeric powder and pressure cook till one whistle. I have taken freshly pealed ground nuts but you can use dried ones too
  2. When the pressure releases, open lid and add boiled dal.
  3. Take a small pan heat oil and add the mustard seeds, lentils, asfoetida, curry leaves, Sambar powder, coconut and tamarind water.
  4. Mix it with veggies, and dal, add salt to taste.
  5. Add water as per desired consistency and simmer for a few minutes. Serve with lemon rice.
