Ingredients Serving: 2

  1. Bitter gourd 4-5
  2. Onion 1 large
  3. Groundnuts - a handful
  4. Saunf or saunf powder 1 tsp
  5. Zeera 1/2 tsp
  6. Amchoor powder 1 tsp
  7. Salt to taste
  8. Mustard oil for cooking

Instructions

  1. Chop the bitter gourd and onion finely. Remove the seeds if you want. Grind or crush the peanuts to make a powder but keep it a little coarse.
  2. Heat oil in a skillet or kadhai. When it starts smoking add zeera, saunf, and chopped bitter gourd. Stir it nicely.
  3. Cover it with a lid. Fry on medium heat until the gourd becomes soft.
  4. Add chopped onion and mix. Sprinkle some saunf powder over it and stir. When the onion starts looking brown crisp and fried, add amchoor powder and stir. Cook the covered mixture for 10 minutes and keep stirring in between so it does not burn.
  5. Finally add the ground peanuts, stir for a while until the peanuts change colour to brown. This will be a quick 2 or 3 mins.
  6. Take off the heat and serve with paratha, roti or naan along with raita.
