Take a large bowl, put in the yeast, sugar and warm water.
Keep this mixture aside till the yeast dissolves and becomes foamy. Once this happens, put only 110 grams of flour into this yeast mixture and stir well. Mix the salt into the remaining flour and stir well.
Knead both of these dough mixtures together on a floured surface until it is smooth.Then place this dough in a greased bowl. Cover with a muslin cloth and let rise till it doubles in size.
Once it doubles in size, take the dough and knead it again.Then cut the dough into 16 pieces, carefully roll each piece into 14 inch rope shapes. Make pretzels shapes and place them on a greased baking sheet.
Cover these pretzels again for 12-15 minutes so that they rise in shape and size.
Take a pot and fill it with water, bring the water to a boil. Drop in the pretzels in batches at a time, boil them for 1 minute each and place them back on the baking sheet.
Brush the pretzels with the beaten egg and sprinkle the coarse salt on top. Bake in the preheated oven on 232 degree celsius for 12-15 minutes.
Serve warm with mayonnaise.
