Maat ki Bhaji ( Amaranth Stir Fry )

Ingredients to make Maat ki Bhaji ( Amaranth Stir Fry )

  • Amaranth leaves bunches - 2
  • Oil - 2 tbsp
  • Red Chilli Powder - 2 tbs
  • Asafoetida (hing) - a pinch
  • Salt - 1 tsp
  • Turmeric -- 1/2 tsp
  • Onion large, sliced - 1
  • Ginger garlic paste - 1 tsp

How to make Maat ki Bhaji ( Amaranth Stir Fry )

  1. Wash, clean and chop amaranth leaves.
  2. In a pot, heat the oil and add asafoetida. After about a second or two, add the sliced onion and the ginger garlic paste. Saute it for 2 minutes until the raw smell fades away.
  3. Now add the rest of the ingredients followed by the amaranth leaves.
  4. On a medium to high flame, let it simmer for the first ten minutes. Later on, for at least 5 mins, stir fry it well so that it does not stick to the pot.
  5. Serve it hot with ghee rice and pickle.
My Tip: No need of adding any water while cooking. It cooks in its own juices.
