Bhutte Ka Kees (Indore style)

Ingredients to make Bhutte Ka Kees (Indore style)

  • Desi or American corn - 1 kg
  • Milk - 1/2 cup
  • oil - 1 tbsp
  • Mustard seeds - 1 tsp
  • Ginger green chilli paste - 1 tsp
  • Asafoetida - 1 pinch
  • Turmeric - 1/4tsp
  • Chilli powder - 1 tsp
  • Salt
  • Lemon juice - 1 tsp
  • Sugar - 1 tsp
  • For garnishing :- Grated fresh coconut
  • Chopped Coriander

How to make Bhutte Ka Kees (Indore style)

  1. Dehusk the corncobs and grate them. Usually desi corns are used for this recipe but if you don't get it easily can use American corn also.
  2. Heat oil in a pan and add mustard seeds. When mustard seeds splutter, add asafoetida, ginger chilli paste and saute them. Add turmeric, chilli powder. Mix properly.
  3. Now add grated corn along with its milk which releases while grating. Mix well and saute this mixture on slow flame. After 2 minutes,add milk and slowly mix properly.
  4. Saute and cover. Let the corn cook in the milk. Add salt once the mixture has cooked and thickened.
  5. Add lemon juice and sugar. You can skip the sugar if using american corn. Mix properly and switch off gas.
  6. Serve in bowls when hot and garnish with grated coconut and coriander.
