15 Minutes Mexican Fried Rice

Ingredients to make 15 Minutes Mexican Fried Rice

  • 2 Cups of Cooked Rice (Leftovers are better)
  • 1 Onion, finely chopped
  • 1 Tomato, chopped
  • 1 Cup Frozen corns, thawed
  • 1 Garlic clove
  • 2 Green chilies, chopped
  • ½ Teaspoon Cumin powder
  • 1 teaspoon red chilli powder
  • ½ Teaspoon Paprika powder
  • ¼ Teaspoon Black pepper powder
  • 2 Tablespoon Olive oil
  • Salt

How to make 15 Minutes Mexican Fried Rice

  1. Heat one tablespoon olive oil in a skillet or wok and add the fine chopped onions into it. Saute the onions for couple of minutes till they become soft. Add the chopped tomatoes,corns and chilies into the pan and cook for another 3-4 minutes.
  2. Add chopped garlic and all the seasonings(including salt) into the pan.Cook till the time garlic becomes a bit brownish in colour.
  3. Add 1 more tablespoon of olive oil and precooked rice into the pan.Give it a good stir and cook for another 3-4 minutes.
  4. Serve it hot.
