Ivy Gourd Stir Fry

Ingredients to make Ivy Gourd Stir Fry

  • Ivy gourd - 1/2 kg
  • Ghee - 2 Tbsp
  • Salt - 1 Tsp
  • Garlic, mince - 1 Tbsp
  • Red Chilli Powder - 1 Tbsp
  • Asafoetida - 2 pinches
  • Kitchen king masala - 1 Tsp
  • Coriander leaves finely chopped - A handful

How to make Ivy Gourd Stir Fry

  1. Wash and cut semi thick round slices of the ivy gourd.
  2. In a pan, heat some ghee and add the garlic mince. Saute it for a few seconds and then add in the asafoetida and the other ingredients as well.
  3. Cover and cook on low flame for 10 - 12 minutes. Do not over cook it. It should retain the crunch. It will be done in 15 -18 minutes.
  4. Garnish with coriander and serve hot. It goes very well with plain rice.
My Tip: Ghee gives an awesome flavour to the dish.
